Gourmet Kitchen Class Notice 1/30, Home Made Sweet Rice Wine

Dear OACA Members,

Sweet rice wine is made from sweet rice (aka sticky rice, or glutinous rice) through fermentation.  It is rich and refreshing. It is not a wine but has the aroma and a moist and pure fragrance of rice.  The sweet rice wine is rich in vitamins, and it invigorates the spleen and digestion track.  It nourishes health, warms up our stomach, warms up the lower body, promotes blood circulation, and relieves neurasthenia.  In Chinese tradition, sweet wine is used to nourish the body and increase milk supply for nursing mother.

Instructor’s background:

Wang Jun (逗乐妈妈), full-time mother. preschool educator in both Chinese and English, enjoy children, a pure foodie with super learning & hands-on abilities.  Likes to explore making gourmet foods.

Ingredients and preparation:

• 720g Glutinous rice, wash, soak for 4 hours and steamed for 30 minutes starting from cold water.  After boiling, let cool and set aside

• 1 "Xianheng taste" brand Shanghai wine cake (culture from oriental grocery store, see picture below)

• a little bit of sugar

• 40°C warm water


Kitchenware/Utensils:  Ordinary kitchen wares, steamer, large soup pot.

尊敬的会员:

甜酒酿是以江米(糯米)经过发酵酿制而成的,浓醇爽口,不属于酒却有着酒的芳香以及滋润的淳淳米香。甜酒酿富含维他命,具有健脾开胃、滋补养生、暖胃、暖宫、活血、促进血液循环、缓解神经衰弱等功效。中国传统还用甜酒酿给产妇滋补身体,增奶等作用

准备原料

·  720g 圆糯米,洗净,浸泡4小时后隔水蒸熟(冷水上锅),水开后蒸30分钟,晾凉待用

·  “咸亨之味”上海酒饼1个

·  糖少许

·  40度C 温开水


厨具/器皿:一般厨房器皿, 蒸笼,汤锅
