Dear OACA Members,
Sauerkraut fish is a famous Sichuan dish. It is hot and sour. The fish is smooth and tender, and the sauerkraut is refreshing and appetizing. The fish is rich in high-quality protein. The lactic acid in the sauerkraut promotes the absorption of iron by our body and increase appetite. It is a simple and delicious dish to make at home.

Instructor’s background：
Quan Xiaomin, from Hunan, loves life. She is sincere, enthusiastic, and warm as sunshine. She is great at cooking, especially Sichuan and Hunan cuisine. Her hand-mand smoke cured meat is one of a kind!
Ingredients and preparation:
· 750g pangasius or dragon fish,
· 1 packet of sauerkraut,
· Chicken broth: Make from half a chicken, ginger, and green, stew in a pot, or use ready-made chicken broth from store.
· Green onions
· Coriander
· Ginger
· Cooking wine
· White pepper
· Oyster sauce
· cooking oil
Kitchenware/Utensils: Ordinary kitchen wares

准备原料:
主料：巴沙鱼或龙利鱼：750克，鸡汤：半只鸡，放姜、葱熬一锅汤，或用Costco的现成的鸡汤
其他辅料：油适量、酸菜1包 、葱、香菜、姜、料酒、白胡椒、蚝油。
